Cold Sesame Noodles with Chicken & Broccoli Recipe

Been making this for years; no clue where I got it first. joe
Ingredients
- 1 bunch broccoli
- 1/2 cup smooth peanut butter
- 1/2 cup hot water
- 1/4 cup light soy sauce
- 2 Tablespoons red wine vinegar
- 2 Tablespoons oriental sesame oil
- 2 teaspoons sugar
- 2 cloves garlic, crushed
- 1/4 to 1/2 teaspoon cayenne pepper
- 2 skinless, boneless chicken breast halves, poached and shredded or cut into 1/2 in cubes
- 1/2 pound linguine or other pasta
- 1 Tablespoon vegetable oil
- 1/2 cup chopped scallions
Directions
Combine peanut butter and water in blender or food processor and mix
until smooth. Add soy sauce, vinegar, sesame oil, sugar, garlic and
red pepper and blend well.
Put cooked chicken in medium bowl and cover peanut butter sauce and
toss to coat. Cover and let marinate in the refridgerator for at
least 2 hours.
Blanch broccoli briefly (10-20 seconds, until bright green); drain
well & set aside to cool.
Cook pasta until firm (al dente), but not overdone. Drain
well. In a large bowl, toss pasta with vegetable oil. Add chicken
with sauce, broccoli and scallion. Serves 3-4.
Variations
- We usually use rotini, but nearly any pasta will do
- Obviously, you can omit the chicken entirely if you want
Tips & Notes
- These days we usually use the pre-cooked chicken, with one
package (6 or 8 ounces) being good enough for a full recipe,
either just plain grilled or roasted, usually not something with a
strong flavor
