Giant Peanut Butter & Apple Cookie Recipe

I clipped this out of a newpaper decades ago - a great cookie.joe
Ingredients
- 3/4 cup (6 oz.) chunky peanut butter
- 3 Tablespoons butter
- 1 cup packed brown sugar
- 1 cup whole-wheat flour
- 2 egg whites
- 2 Tablespoons skim milk
- 1/2 teaspoons baking soda
- 3/4 cup quick-cooking rolled oats
- 1 medium apple, peeled, cored and finely chopped (about 3/4 cup)
Directions
In a small mixer bowl beat peanut butter and butter with an electric
mixer on medium speed about 30 seconds or until softened. Add brown
sugar, half of the flour, the egg whites, milk and baking soda. Beat
until well combined. Stir in remaining flour, rolled oats and apple.
Drop by well-rounded tablespoons onto an ungreased cookie sheet;
flatten slightly with the bottom of a glass.
Bake in a 350-degree over for 12-14 minutes or until golden. Remove
from the cookie sheet; cool on a wire rack. To store, place in a
moisture- and vapor-proof container; seal, label and freeze up to 6
months.
Makes 16 to 18 cookies.
Tips & Notes
- If using air-bake pans, cook 15-16 minutes
